Salată de ardei cu quinoa

INGREDIENTE

  • 500 ml de supa de legume (sau 500 ml apa + cub de legume)
  • 200 g de quinoa (rosie, nedecorticata daca se poate)
  • 3 ardei
  • 3 linguri de samburi de pin
  • 1 lingura de ulei de masline
  • 1 lingura de otet balsamic (sau otet de miere)
  • 1 varf de Tabasco sau chili
  • 1/2 lingurita de sare
  • piper
  • 200 g de tofu sau mozarella

Fierbeti quinoa 15 minute in cei 500ùl de supa de legume si lasati pe urmasa se raceasca si sa absoarba tot lichidul.

Coaceti ardeii la cuptor si taiati bucati mici; taiati tofu sau mozarella cuburi.

Amestecati toate ingredientele intr-un castron mare de salata!

E o salata care se pastreaza bine in frigider o zi sau 2!
